Harvesting in organic soil

Just wanted to see if there’s any one out there growing using soil/organic dry amendments and what they’re end of life cycle practices are?

I’ve got a few plants finishing up, maybe 1-2 weeks out and was wondering what steps people take when reaching this point. 

Normally I just carry on watering when dry, when I think the plants are ready I put them in the dark for a bit then chop them.

last one I chopped I didn’t water for a week and a bit before chopping after hearing a long time grower talk about their harvesting practices and thought I’d give it a shot. Was a small plant and I’d say the dry time was about a week, bit quicker than I wanted but I thought it dried pretty nice and my meter read 62% humidity when it hit the jars. 

I have found in the past that I lose smell when drying, I don’t know if it’s in my head or what but I just find that they smell great when growing then kinda diminish when drying or sometimes take on that faint “hay” like aroma.

Ive never had a dedicated spot for drying I just try to put it somewhere dark and cool with no direct air blowing on the plant, normally just my clothes cupboard as it’s an old wonky one so fairly breathable (I feel) dark, humidity around 50% and temps of about 20c.

Is there better practices I could be following to really get the max out of the buds? What are your practices when it gets down to chop time? Do you do anything in the weeks leading up to it?
